Mozzarella Oiling Off & Poor Stretch: Causes and Fixes

Short answer

Mozzarella that oils off, stretches short or blisters dark is usually stretched at the wrong pH. A pH at stretch outside the 5.15 to 5.30 window, too much or too little insoluble calcium, the wrong cooker-stretcher temperature or residence time, the cheese’s age and residual galactose are the common causes. The fix starts with the make-sheet pH curve and the bake test, then a narrower stretch-pH and temperature window.

  2. 2Free oil pooling yellow-orange on the pizza surface
  3. 3A torn, uneven melt instead of a smooth, fused layer
Usual causes
pH at stretch outside the 5.15 to 5.30 window, insoluble calcium too high or low, cooker-stretcher temperature and residence time, age and proteolysis, residual galactose
What we review
pH and TA curves, calcium, moisture and FDM, cooker water temperature logs, Schreiber melt and free-oil tests, bake-test photos at several ages
Typical levers
Starter ratio and inoculum, set and cook temperatures, stretch pH target, brine and cooling, shelf-age window for each customer spec
